Cleveland PEM242 Description

Constructed of 430 stainless steel, the Cleveland PEM242 electric steamer resists dents, scratches, and corrosion and has two steaming compartments that operate at a pressure of 5 PSI. A gauge displays the internal pressure, and if it gets too high, a valve relieves some of the stress. Due to the internal pressure, temperatures in this steamer get higher than they do in convection steamers. This design cooks food quickly and works well with dense dishes. For user safety, a mechanical interlock keeps the compartment doors closed when steaming.

This Cleveland PEM242 floor steamer requires a direct water connection. When it is turned on, the steam generator pulls in water automatically. Keeping track of the cook time while employees prepare other dishes, both compartment timers can be set for 60 minutes or less. Once the cycle is done, the timers audibly alarm nearby users, and after hours of cooking, the steamer can be switched off to blow down the generator. This process helps flush out built up sediment and debris so that the unit works properly. Because the slide racks and door gasket can be removed without tools, cleanup is quick and painless.
